    My mothers recipe for ham:

    make slices into the fat/meat at the top of the ham, and pour a mixture of honey and brown suagr into the slices. Pour extra honey/sugar over the whole surface. Stick cloves into the fat, about one or two in every square inch. Wrap in tin foil, but leave the top open. Bake for 2 hrs at 165 degrees celcius, then remove the tin foil and leave until completely cooked.

    With my pork leg i usually score the SKIN diamond shape, oil it and salt it well. place in oven full or high heat for the crackling to start it's magic. Reduce heat to 325.
    In a small bowl, 3 table spoons honey, teaspoon of EVOO, very finely chopped garlic, teaspoon of oyster sauce, and teaspoon of Dijon mustard, mix it well baste regularly with a basting brush over your leg.....not your leg the one in the oven. Your looking at a good two, two and half hours, gives you plenty of time to prepare salads and deserts. The pan juices are yummy for the gravy.
