My mom joined my dad in heaven about 3 weeks ago. Growing up she made huge thanksgiving dinners with all the family. When she had a stroke a few years back I took over the cooking. Now that she is gone my brother is moving in with his fiance and everyone else (long moved out of state) no longer sees "the point" of coming. We have no children of our own so now Thanksgiving is just my spouse and I. How do I scale back all the food for just two? Especially what size bird? I've tried cornish game hens and I don't like them, but my spouse won't be happy without my "turkey day goodies". Even my downstairs neighbor just moved out so there is no one to share with.

oh, and shelters and soup kitchens are also a regular part of the day for us, but they won't take homemade food around here - just the ingredients.

For several years my husband and I have both worked on thanksgiving, so we make a special lunch for the two of us. Due to food allergies, and common sense (why make a whole turkey?) some of the food is a little different, but has become tradition to us.
Instead of a turkey, we make a kielbasa. You could substitute a rotisserie chicken it's smaller, and the leftovers can be used in a ton of other dishes.
We make a smaller batch of garlic mashed potatoes and stuffing (but we always make sure to have them).
We also make a green bean casserole, but instead of mushroom soup, we use alfredo sauce, mozzerella, and sauteed garlic and onions.
For desert you could make pumpkin tarts, pumpkin ice cream, or baked apples with brown sugar.
The first time my daughter and I had Thanksgiving alone, we went to a restaurant. The food was OK and probably cost a lot less than making a big meal at home, but it just wasn't the same atmosphere as a Thanksgiving at home. The next year we decided we didn't need a big turkey and my daughter gave some suggestions. We had cornish hens roasted with a fruit and nut stuffing (you could also do a turkey breast) and some wild rice, broccoli, and a few other simple sides such as black olives. I made stuffing from a box of stovetop, but I cooked some celery and onions in butter and added to it. I asked her what kind of pie she would like, she said pumpkin so I made one of those and a lemon meringue for myself. It was a peaceful and nice Thanksgiving and we had leftovers for the rest of the weekend. A beginner cook tackling a Thanksgiving for two, any menu ideas ::

get a turkey breast. it will be big enough for the 2 of you and you'll have the leftovers for sandwiches and stuff the next day. you can still cook the "turkey day goodies", just cut back on the amount you prepare. and like the turkey, leftovers aren't a bad thing ;)
i commend you giving your time to those in need, especially during the holidays. i don't think some people realize how much it really means to people who wouldn't otherwise have a nice, hot dinner. we take lots for granted.
