i want to make a suprise meal for my mum cuz shes tired when she gets home from work and i dont want to waste time and yeah....

Macaroni cheese
Roasted vegetables with cous cous or rice
Pasta with pesto
***Hot Seafood Sandwiches
1/2 tsp. dried dill weed
2 Tbsp. Dijon mustard
2 cups deli seafood salad
8 slices sourdough bread
1 cup shredded Havarti cheese
1/2 cup cocktail sauce
4 Tbsp. butter, softened
Stir dill and mustard into seafood salad and divide among half of the bread slices; sprinkle with cheese and top with cocktail sauce.
Top with remaining bread slices. Butter outsides of sandwiches and cook on a skillet or dual contact grill until bread is toasted and crisp. Slice in half and serve immediately. 4 sandwiches
******Pan-Fried Petrale Sole with Lemon, Butter and Caper Sauce
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
4 pieces Petrale sole
Salt and freshly ground pepper
3 tablespoons olive oil
Juice from 1 lemon
3 tablespoons butter
1 tablespoon capers (optional)
Lemon wedges for garnish
Season both sides of the fish with salt and pepper.
Heat a frying pan on medium-high heat. Add the olive oil to cover the bottom of the pan. When oil is hot but not smoking, add the fish pieces. Cook 2 to 3 minutes on each side, until fish is brown and crispy. Turn the fish over with a spatula and cook another 2 to 3 minutes on the other side. Pour lemon juice over the fish and remove from pan. Set aside. Add butter and capers to hot pan. Swirl butter until melted, scraping any bits off the bottom of the pan. Spoon butter sauce and capers over the fish and serve immediately with lemon wedges.
******Pasta with Garlic and Cheese
Prep Time: 2 minutes
Cook Time: 8 minutes
1 lb. spaghetti pasta
5 Tbsp. olive oil
3 cloves garlic, minced
1/2 cup chopped flat leaf parsley
1/4 tsp. salt
1/8 tsp. pepper
3/4 cup grated Romano or Parmesan cheese
Cook the pasta according to package directions. Meanwhile, chop the garlic and parsley and saute the garlic in the olive oil for about 2-3 minutes, stirring frequently. Combine with the parsley and salt and pepper in serving bowl. Drain the pasta and toss with the garlic/parsley mixture. Top with cheese and toss again. Serve with more cheese, if desired. Serves 4
*******Mediterranean Wrap
1 tablespoon 1/3-less fat cream cheese
1 (9-inch) spinach or tomato-basil wrap
3/4 cup chopped fresh baby spinach
1/2 small avocado, sliced
1/3 cup crumbled feta cheese
1/4 cup chopped tomato
2 tablespoons sliced black olives
1 to 1 1/2 tablespoons chopped fresh basil
1 tablespoon wine vinaigrette(Optional)
Spread cream cheese over 1 side of wrap. Top with chopped spinach and remaining ingredients.Roll up wrap tightly. Cut diagonally in half.

Cook Time: 5 minutes
1 Tbsp. olive oil
4 6 oz. sole fillets
juice and zest of one orange
juice of one lemon
2 Tbsp. chopped fresh chives
1/2 tsp. salt
1/8 tsp. white pepper
Place oil in large skillet and heat over medium heat. Place fish fillets in skillet and sprinkle with orange juice and lemon juice. Cook for 5-7 minutes until fish flakes easily when tested with fork. Sprinkle with orange zest, chives, salt, and pepper and serve.
*****Spinach and Cheese Tortilla Pizza
Total Time: 13 minutes
2 large (10 inch) flour tortillas
2 tbsp nonfat sour cream
1 (10 oz) package frozen chopped spinach, thawed & squeezed dry
1 large tomato, chopped
1/2 cup shredded, reduced-fat Monterey Jack cheese
1/4 cup thinly sliced green onions (scallions)
Preheat the oven to 450°F. Place the tortillas on a baking sheet coated with nonstick cooking spray. Bake for 3 minutes, or until golden brown. Remove from the oven and reduce the temperature to 350°F.Spread the sour cream evenly over the tortillas. Top with the spinach and tomato. Next, sprinkle evenly with the Monterey Jack cheese. Bake for 5 minutes more, or until the cheese is melted. Sprinkle with the green onions. Cut each tortilla into 6 slices and serve immediately.

It's easy to make and it's VERY delicious.
and has no meat!
5 teaspoons olive oil
4 shallots, diced
1 large onion, cut into thin strips
1 pound bacon, cut into strips
1 clove garlic, chopped
1 (16 ounce) package fettuccini pasta
3 egg yolks
1/2 cup heavy cream
3/4 cup shredded Parmesan cheese
salt and pepper to taste
Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.
In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.serves 6

You are a thoughtful caring daughter How about making some canned baked beans with a little fried onion & green pepper a good dash or two of ketchup, molasses and a tad of mustard? you could have this with a can of biscutis if you eat cheese maybe some scalloped potatoes with cheese you can slice a loaf of french bread spread it generously with real mayonaise( not salad dressing) and sprinkle with garlic powder and parmsean cheese and pop in oven till nice and brown careful it may burn about 7 minutes
Ahot bowl of vegetable soup is always welcome ..fry onions & celery in olive or vegetable oil (can also add two cloves of minced garlic if you like) out in in soup pot and add 2 cans vegetable broth 2 cans of water 2 bay leaves one big can of cut up tomatoes 2 potatoes cubed and simmer 30 minutes then add a bag of frozen mixed vegetables you can also add other vegatables that you like a little shredded cabbage, green beans , or even a small package of spinach and a good pinch of basil salt & pepper continue simmering till all vegetables are soft about 30 minutes at this point I like to add a nice handful of frozen cut up okra and cook 5 minutes more ,serve with hot biscuits rolls or french bread A nice hot pot of tea after a long day is great too! 1 cup (50 g) grated Parmigiano (buy a chunk and grate it fresh)
3 tablespoons tomato paste, diluted with 1/4 cup hot water
1 hot pepper
1/4 cup or so (maybe a third of a cup) good vodka -- you want something that has a taste to it
1 teaspoon brandy
2/3 cup fresh cream
1 pound rigatoni
Preparation:
Bring pasta water to a boil, lightly salt it, add the pasta, and give it a good stir.
In the mean time, melt the butter in a large pot and stir in the tomato paste and the hot pepper. Let the mixture simmer over a low flame for a couple of minutes, then stir in the cream, and when the sauce comes back to a boil, the vodka and brandy. Fish out and discard the pepper, stir in the grated cheese, and continue stirring gently until the sauce is well amalgamated and creamy.
By now the pasta should be about done -- you want it still somewhat al dente. Drain it, transfer the pasta into the sauce (this is why you need a large pot), and cook over a brisk flame, stirring energetically, for about a minute to help the pasta absorb the sauce.
