For the microwave I think you are in luck. The lower cost units have less bells & whistles, and so they are easier to operate. For my parents I would get one with a timer knob. The single rotational movement of the timer is more familiar to them than the digital display and which buttons to push.

You can buy very easy to use microwaves for around $100. Just go to Walmart and look at the ones they have.
I really like Panasonic Microwaves. They are easy to use and are decently priced. They also last a long time.
